wrapping Samwiches and Po Boys
Wrapping items correctly will help increase speed and consistency
Set up
- Samwich or Po Boy
- Deli Paper
Preparation

Place the Samwich in the middle of the paper
Gently fold the bottom half of the paper over the samwich, then repeat it with the top half
Crimp the right and left sides of the deli paper and tuck underneath the samwich
Wapping a Po Boy
Place the paper at an angle and put the Po Boy near the bottom corner
Lift the corner to cover the Po Boy, then roll it twice
Take the right and left side and fold it over
Roll the Po Boy one more time and tuck the top corner into the folds
After the food has been wrapped, take a sharpie and label the item with an abbreviated name (i.e. Shr/Cr for a shrimp and crab po boy)
