How to Bread
Properly breading will consistently ensure a light and even coat of breading on the food.
Set Up
- Milkwash
- Breader
- Strainer
- Sifting Basket
Preparation
Step 1
Take the protein and put it in the milk wash
Remove from the milk wash and place it in the breader
Step 2
Make sure to completely coat the protein, in the bottom of the bus tub. Sift the protein until all the excess breader has been removed.
Add the breaded protein to a fry basket and cook.
Cleaning the Breader
To maintain the breader quality you should clean the breader often.
Step 1
Take the breader and place it in the sifter
Shake until all the quality breader has been sifted out
Discard the waste breader
Repeat this process often during your shift
