Boxing and bagging

When setting up the trays and boxes, following this pattern will help increase your speed and accuracy.

Items Needed

Preparation

TRAYS

Place your Tartar and Cocktail sauce on the top of the tray (as required)

Then add the side 

Below add your protein

Skrimp should be placed above the protein (and if necessary, on top of the side item)

boxes

For Boxes follow the same rules as the tray except place the Tartar and Cocktail on the right side of the box.

Bagging

start with your protein(s) 

Next, add your side(s)

Then add any sauces to the bag

When placing items in the bag keep cold items separate from hot items
